- 1 cup of cooked quinoa
- 2/3 cup edamame, cooked and shelled
- 1/4 cup raw shredded carrots
- 1/4 cup chopped cucumber dressing
- 2 tsp. sesame oil
- 1 tsp. rice wine vinegar
- 1 tsp. soy sauce
- 1/2 tsp fresh ginger, grated
- 1/4 tsp. garlic powder
Mix salad ingredients together in a bowl. In a separate bowl mix dressing ingredients. Drizzle the dressing over the salad and enjoy!!!
We have substituted Newman’s Own Light Ginger Sesame Dressing for convenience and it is delicious.
