Roasted Red Pepper Sauce

Ingredients

1 jar (16 ounces) roasted red peppers, drained

1/4 cup EVOO

1/4 onion, chopped

2 garlic cloves, minced

2 tbsp. chopped fresh parsley

1 tbsp. capers, drained

Juice of 1/2 lemon

1/2 tsp. each salt and pepper

Directions

Looks like tomato sauce, but it’s not! This can be used on top of anything, eggs, chicken, vegetables, anything you want! Enjoy.

1) Combine all ingredients in a food processor and pulse 5 to 10 times to combine, then blend on high speed until smooth.

2) Store in the refrigerator for up to 5 days.
