Ingredients
The Dressing:
- 1 cup loosely packed cilantro, stems removed and roughly chopped
- 1/2 ripe avocado
- juice from 1/2 lime (or more to taste)
- 1 clove garlic
- 1/4 cup olive oil
- 1 1/2 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
- 1 tsp raw honey
The Salad:
- 1 large head of romaine lettuce chopped
- 1 red bell pepper chopped
- 10 oz frozen baby corn, thawed (about 1 3/4 c)
- 1 16 oz can of black beans, drained and rinsed
- 1 small red onion chopped
- 1 cucumber, seeds removed and chopped
- 1 serrano chili, seeded and chopped
- 1 tomato, seeded and chopped
Directions
