Ingredients
- 1 pound of fully cooked boneless skinless chicken breast. (Cook ahead of time in your crockpot for tender chicken and easy shredding)
- 1 6ounce container of plain Greek yogurt (I used Fage 0%)
- 1.5 ounces of chopped walnuts
- 2 ounces of raisins
- 1/2 red onion, chopped
- 2 cups raw broccoli, well chopped
- 1 apple chopped
- 1 tablespoon apple cider vinegar
- 2 tablespoons dijon mustard
- 1 packet of stevia (or to taste)
- salt and pepper to taste
Directions
Combine all ingredients in a large mixing bowl. Adjust seasoning to taste. Makes four hearty portions. Enjoy!!!
