Sweet and Savory Chicken Salad

Ingredients

  • 1 pound of fully cooked boneless skinless chicken breast.  (Cook ahead of time in your crockpot for tender chicken and easy shredding)
  • 1  6ounce container of plain Greek yogurt (I used Fage 0%)
  • 1.5 ounces of chopped walnuts
  • 2 ounces of raisins
  • 1/2 red onion, chopped
  • 2 cups raw broccoli, well chopped
  • 1 apple chopped
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1 packet of stevia (or to taste)
  • salt and pepper to taste

Directions

Combine all ingredients in a large mixing bowl.  Adjust seasoning to taste.  Makes four hearty portions.  Enjoy!!!

324 calories per serving:  9 grams fat, 27 grams carbohydrate, 4.5 grams fiber, 34 grams protein
