Ingredients
- 2Tbs olive oil
- 1 can garbanzo, drained and rinsed well
- 2 small zucchini, chopped
- 1 large red onion, chopped
- 3 eggs
- 1 Tbs fresh ginger, chopped
- 3 cloves garlic, chopped
- 1 lemon
- salt
- 1/2 teaspoon of each: cumin, coriander, turmeric, cayenne
Directions
- Saute the onion and zucchini in the olive oil until soft.
- Add garlic and ginger and cook for a couple of minutes, then add the spices.
- Preheat oven to 350.
- In a blender, add garbanzos, eggs, sautéed veggies, juice from lemon, pinch of salt.
- Blend it all together until it’s an even consistency.
- Spoon mixture onto a non-stick baking sheet like cookies.
- Bake for about 20 minutes, until they are golden brown.
These are delicious with peanut butter warmed on top:)
