Ingredients
- 1 cup quinoa (uncooked)
- 2 cups water
- 1tsp turmeric
- Sea salt (to taste)
- 1 red bell pepper, diced
- 1/2 large red onion, diced
- 1/3 cup chopped fresh cilantro
- 1 cup cooked corn
- 2- 15 ounce cans of black beans, drained and rinsed well
For the dressing:
- 5 Tbs fresh squeezed lime juice
- 1/4 cup olive oil
- 1/4 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp sea salt
Directions
Cook quinoa in salted water with turmeric according to package directions, about 15 minutes. Let cool
Combine all ingredients with cooked, cooled quinoa in a large bowl.
Mix dressing ingredients together in a small bowl and drizzle over quinoa salad right before serving.
This recipe may be made up to 24 hours before serving. Store in the fridge and bring back to room temp to serve.
