Ingredients
- 1 tsp ghee or coconut oil
- 3 pounds boneless skinless chicken breast cut into large cubes
- 2 large carrots, chopped
- 1 yellow onion, chopped
- 2 tablespoons tomato paste
- 1- 15 ounce chick peas, rinsed and drained
- 2 cups chicken stock
- 2 tablespoons apricot preserves
- 2 tablespoons almond butter
- 1 tsp cinnamon
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/2 tsp ground black pepper
- 1 tsp salt
- 1/2 cup raisins
- Lemon Wedge and fresh chopped cilantro to serve
Directions
1. Heat ghee or oil in a large skillet. Brown the pieces of chicken over medium heat.
2. Combine the remaining ingredients in crock pot. Add chicken. Cook on low for 8 hours. Garnish with lemon and fresh chopped cilantro.
