Summer Vegetable Potato Salad
4th of July is next week and I wanted to give you a recipe that you can serve at a cookout. You thought I was going to do a dessert recipe didn't you?! Um, that's what ice cream joints are for--helloooo Acushnet Creamery! When I am invited to cookouts, I usually like to bring something that I can eat instead of relying on the hosts to have something for me. I have made this salad many times and it's a big hit in my house. The original recipe called for corn instead of beans. It also called for feta cheese instead of goat cheese. I also changed the potatoes, I use sweet potatoes instead of yellow or red tiny potatoes. I suggest not letting the potatoes get too soft. It will make for a mushy potato salad when you mix all the ingredients together. You want the potatoes to be able to absorb all the dressing and stand up to the mixing of the ingredients. No mushy potato salad here. I like the black beans in the recipe but if you are not a fan please feel free to leave them out.
